Mini S'more Cheesecakes

What You'll Need:

1 1/4 Cups Graham Cracker Crumbs
3 Tbsp. Granulated Sugar
5 tbsp. Unsalted Butter (Melted)
8 oz. Challenge® Cream Cheese (Softened)
1/4 Cup Sour Cream (Room Temp.)
1 Egg (Room Temp.)
1/4 Cup Granulated Sugar
1 tsp. Vanilla Extract
2/3 Cup Chocolate Chips
1/4 Cup Heavy Whipping Cream
12 Large Marshmallows

How to Make Mini S'more Cheesecakes

Bring the campfire indoors with these delicious Mini S'more Cheesecakes! Celebrate the fall season and bake cheesecakes with a graham cracker crust, spread a ganache and top it all off with a toasty marshmallow!
  • 1 Prepare & preheat the oven

    Preheat the oven to 350°F. Line 12 muffin pan holes with liners.

  • 2 Create the graham cracker crust

    Stir together graham cracker crumbs, sugar and melted butter. Press about 2 to 2 1/2 tablespoons of the mixture into the bottom of each muffin liner and press to bottom.

  • 3 Create the cheesecakes

    Beat room temperature cream cheese with a hand mixer until fluffy. Beat in room temperature sour cream. Beat in egg, sugar and vanilla extract.

  • 4 Bake the cheesecakes

    Evenly divide (about 2 to 2 1/2 tablespoons each) cheesecake among the crusts. Bake for 18-20 minutes until they just begin to brown. Cool completely and refrigerate for at least 3 hours or overnight.

  • 5 Create the ganache

    Make the ganache (about 2-3 hours before you're ready to serve). Place cream and chocolate chips in a microwave safe bowl or measuring cup. Heat for 45 serconds, then whisk until completely smooth (may take more or less time depending on the microwave). Let sit until it's thick enough that you can spread it without dripping.

  • 6 Assemble the Mini S'more Cheesecakes

    Spread the ganache over the chilled cheesecakes. Toast a marshmallow over a gas stove, a BBQ or kitchen torch and place on top. Serve immediately after you've placed the marshmallow on top.
